Nutritional Benefits: This is a sweet treat that has an autumn kick to it. Although it may look like an ordinary brownie, it is full of pumpkin and various seeds to add vitamins and protein.
Ingredients:
24 g All Purpose Flour 1 g Baking Powder 1 g Salt 24 g Butter 89 g Sugar ½ tsp Vanilla Extract 1 Eggs 15 g Cocoa Powder 30 g Semi-sweet Chocolate Chips 60 g 100% Pumpkin Puree 30 g Walnuts 3 g Cinnamon 1 g Nutmeg 75 mL Almond Milk 5 g Ground Pumpkin Seed 3 g Ground Sunflower Seed |

Directions:
Preheat oven to 350°F. Fill cupcake pans with cupcake paper. Stir the flour, baking powder, and salt together in a bowl.
In another bowl, stir together the melted butter, sugar, almond milk, and vanilla extract; beat in the eggs. Gradually add the flour mixture, and stir the batter until it's evenly moistened.
Blend in the cocoa powder and chocolate chips. Stir in the pumpkin puree, walnuts, cinnamon, cloves, nutmeg, pumpkin seeds, and sunflower seeds. Spoon brownie mixture into cupcake tins halfway.
Bake in the preheated oven until the brownies have a toothpick inserted into the center that comes out clean, 40 to 45 minutes. Cool in the pan and serve.
